A mushroom with a very delicate taste that goes wonderfully in your most delicate sauces.

  • Firm texture and spicy tasteDrying chanterelles accentuates their flavors, they have a very interesting and distinct scent with spicy notes resulting in a slight peppery taste at the end of the mouth. Rehydrated dried chanterelle mushrooms are a little different from fresh chanterelle mushrooms, their slightly crunchy texture is firmer. We prefer them finely cut in all sauces and soups, preferably to avoid in a pan as you would with fresh chanterelle mushrooms.

how do I properly rehydrate my dried mushrooms?

In order to rehydrate your dried mushrooms as best as possible, we advise you to pour the desired quantity into a container, cover them with lukewarm or hot water (avoid adding too much water), wait for around 2.5 hours, stirring from time to time. Then drain your mushrooms in a colander without pressing them, avoid rinsing before and after rehydration. Your mushrooms are ready to cook!

Tip: you can recover the perfume-laden rehydration juice to accentuate the flavor when cooking your mushrooms or to use in other recipes (soups, sauces, etc.)
