Onion and yellow chanterelle tart
Ingredients:
- 1 puff pastry
- 1 kg of onions
- 20 cl of fresh cream
- 25 g of dry yellow chanterelles from Chef Morel
- salt, pepper
Recipe :
1. In a container, rehydrate your chanterelles in lukewarm water for at least 30 minutes, the ideal being to wait 2 to 3 hours. Keep your rehydration juice.
2. Spread your dough in a tart pan. Prick the dough with a fork.
3. Sweat the sliced onions with oil in a frying pan over low heat.
4. When the onions have browned, add your chanterelles as well as its rehydration juice and simmer until the liquid is completely reduced.
5. Add the crème fraîche, salt and pepper.
6. Pour the mixture onto the dough.
7. Bake in an oven at 180°C for around 40 minutes
