Filet mignon, morels & green beans
Ingredients for 4 persons :
- 60 gr of dried morels- On sale here - a>
- 800g filet mignon (veal or pork)
- 1 kg fresh green beans
- 20 cl liquid whipping cream 30%
- salt, pepper and butter
Recipe :
1. In a container, rehydrate the morels by covering them with lukewarm water for 1h30, then drain them gently.
2. Have the green beans and cook them for 15 minutes in boiling salted water (they should remain crunchy). Keep warm.
3.Cut the filet mignon into medallions. Gently heat the butter in a pan and brown the medallions for 8 minutes on each side over medium heat. Salt, pepper. Keep warm.
4. Brown your morels in a pan over medium heat in 20g of butter, stirring frequently for around ten minutes. Salt, pepper,
5. Add the cream and cook, stirring regularly, over medium heat for 5 to 10 minutes depending on the desired consistency of the sauce (some prefer it thinner, others thicker). Adjust the seasoning if necessary.
5. Arrange the medallions on warm plates, top with morel sauce and serve with bundles of green beans.
